 Dinner tonight...

I am making seafood ravioli, (yes from scratch) appetizers = Bruschetta and my special creamy olive spread.

Dessert , well I'm still deciding.

I'm in a gourmet foody mood, and have a tin of imported clam nectar I have to use before it expires so....

Ok... I'm currently holding a survey...

Are you a male and dislike almonds, almond essence, ammaretti, almond paste aka marzipan?

I am not making two desserts, I really really want to make the orange and almond cake, and serve this with clotted cream...(fat people love me) but the couple I have invited over for dinner , the male of the duo hates all things almonds.


Definitely a guy thing!

(Serves 4 to 6)

1/2 cup flour
1/2 teaspoon baking powder
2 eggs
3/4 cup plus 2 tablespoons sugar
5 tablespoons orange juice, divided
1/3 cup olive oil
3/4 cup finely ground blanched almonds
1 tablespoon grated orange peel
1 tablespoon orange-flavored liqueur such as Grand Marnier


Preheat oven to 350 degrees.
Grease and flour an eight-inch round cake pan.

Combine the flour and baking powder in a bowl and set aside.
With an electric mixer, beat the eggs until light.
Gradually beat in all but two tablespoons of the sugar until light and fluffy.
Beat in three tablespoons of the orange juice, then gradually beat in the olive oil.
Stir in the ground almonds and the orange peel.
Gently stir in the flour mixture.
Spread the batter in the prepared pan.
Bake 35 to 40 minutes, until the cake is golden and a cake tester comes out clean.
Remove from oven and allow to cool 10 minutes on a wire rack.
Remove the cake from the pan and place on a wire rack.

Dissolve the remaining sugar, orange juice, and orange liqueur in a small saucepan.
Bring to a simmer and cook about two minutes, until the mixture turns syrupy.
Brush the glaze over the hot cake and allow to cool about one hour before serving.

I am going to cheat and buy a couple of frozen desserts for the guys who hate almonds from a local Italian pizzeria....hahahah...just as a back up in case they hate my cake, this and detect the almonds in it.

See, I can be thoughtful.

You watch, I bet they back up for seconds when it comes to this almond cake, I wont even tell them whats in it.

So they will get 2 desserts.

i know almonds used in too large a quantity is a source of poisoning

Um, that would be bitter almonds my friend.

Smile ..I actually have a bottle of bitter almond essence in the cupboard, but it's used very very sparingly, usually only a few drops in bitter ammareti biscuits.

However if you were coming over for dinner tonight, I would make a point of using 'bitter almond' essence, the whole bottle in fact.

There are sweet almonds and bitter almonds, it's bitter almonds that contain the cyanide.

Well, I'm sitting here enjoying a nice cup of Ginger tea, cakes cooking, so am putting my feet up for a bit.


Smile Pasta dough is in the fridge, resting, allowing the gluten to do it's thing.....but I'll have to go shortly, they will be here at around 6'sh.

Cakes just about ready to come out of the oven, house smells amazing, time to make the glaze... .... has to go on while the cakes still hot.

On another note... good morning all. Smile


Dinner was lovely, however, re- the almond and Orange cake, as scrumptious as it was, it dipped in the center slightly, so use medium eggs.


I used extra large organic eggs and the cooking time was a little out of whack.

Had I used medium eggs, the cake would have probably risen evenly and the cooking time would have been spot on.

It was still delicious and moist though.

Smile I'd make it again, and served with clotted cream, it was just amazing.

Such an easy cake to make.

Simple and delicious, not too fancy, but can be jazzed up ...according to the occasion.

A good night had by all.

And yes....the guys ended up loving it, even though I told them there were almonds in it before hand, I gave them the choice between bought Italian frozen deserts,
(Tortonis), and my almond orange cake, so they ate both....lol.


They wont be so lucky next time...Wink

One thing we learned after last night, my friends 7 year old daughter may have developed a nut/egg allergy.... she just called.

Shocked ... Which of the two, well, this is yet to be decided, she will require allergy testing, or an elimination diet.

I hope it's the almonds, and not the eggs, as her diet will be much more restrictive.

They are up at the medical center now with what appeared initially as some sort of German measle rash on her torso....

it could even be the combination of a couple of things.

Anyway, she's OK, this sort of thing happened when she was littler, so I'm inclined to think it's something she doesn't eat too often, my moneys on the almonds!

No, the clam nectar was fine, and I think this may have been this little girls first ever proper seafood, (other than fish and chips)...

Shell fish allergy is one of the more common allergies, and they are usually ok with other seafood.

Either way, she will be having allergy testing in a fortnight (they want the histamine response well out of her system or else it can give a false positive result apparently)

I still feel terrible Sad Even though it was something beyond anyones control, allergies happen and all.

Poor kid!
