| The beauty of my lasagne is that I use 3 different types of mild-medium chillies and 3 different types of speciality cheeses instead of gluggy old flavourless bechamel sauce .....one of the cheeses which is easy to come by is boccini, (baby mozzarella) this is what gives it it's bubbled effect on top, because the other cheese melt around the balls of baby mozzarella cheeses first... and I buy a speciality matured finely grated vintage cheese fresh from a deli... See if you can guess what it is. if you guess, then I will give up the recipe. ...The tomato sauce is warm sweet and slightly tangy. I only use two layers of wholemeal lasagne pasta.... (more healthy this way) and use seasoned sliced egg-plant in between the two layers ....and despite how cheesy it looks, it's no where near as cheesy as some. Big on flavour and vegetable, lower than most lasagne's on fat and no floury, gluggy gloop. ( aka bechamel) Why use milk and flour and a little cheese and butter to enhance the lasagne, when you can use a variety of speciality cheeses which pack a bigger punch and taste so much better? Cost wise, this is not a cheap lasagne, but hey.... you get what you pay for yes? .. I am a foody, and prefer a well stocked pantry and fridge to designer clothing, jewellery, and shoes any day. Food is my life. Because you can share food...share it with friends and family. | |

| Always start the lasagne with placing a good amount of home made tomatoes sauce in the bottom of the baking dish...then you add 4 sheets , squares of bought dried wholemeal lasagne, spread over some more sauce, then apply layer of eggplant cut 1/4 inch thinck. Season them with salt, pepper and a little sugar...then add 1/2 your tomato sauce to the browned beef mince and two finely chopped zucchini you browned with the meat... with some tomato paste, so it's not too runny, then place this (make sure you season each layer well)...then place 4 more lasagne squares on top of the meat mix...then top with the remaining tomato sauce, then sprinkle with a couple of handfuls of pizza cheese (it has three types in it)...then top with a tub of boccini cheese (which you have drained first of course, as they come in a tub of liquid...(baby mozzarella) ...then cover with foil and cook in the oven for 25 minutes at 180c.....when the bell goes off....pull out the lasagne, remove foil and then sprinkle freshly and finely grated speciality vintage cheese)..or you can use parmesan, in the places where the sauce appears on the surface, making sure the top is entirely covered with cheese. Return to the oven, ....then cook until it's browned like mine...another 30 to 40 mins on the mid to top rack. .....The secret is in the tomato sauce, and the speciality cheese I have not named here. | |

| If you lot are wondering why my mortar and pestle are on the dining table...no, it's not for decoration/show, it's salt. I don't like the way commercial grinders grind salt... I like the grade a certain way....I know, it's a tad idiosyncratic, but it's my way. | |

I find it odd how you are here 24/7, I get that you don't like melli but a normal person would stay away from the person they hate not stalk them like you are obviously doing. PS there are meds for your dysfunction, all you have to do is go see your GP and get a referral for a Psychiatrist. |

| Exactly notso..... there's no excuse these days , plenty of medication out there to be had. Medicated or not, some people are just plain dull I guess. Sad repetitious little Muppets, harassing , flaming perfect strangers online.... Sometimes, I imagine them all to be in wheelchairs, or locked up in some sort of correctional, psychiatric facility.... I think madcow lives in one ...so perhaps they all do? | |

| Lol....I had better fry up those tomatoes in my fruit bowl for breakfast in the morning...lol, before they get too ripe. ...I'm now contemplating what I'll make for dinner tomorrow night, have to go out shopping tomorrow. My children are fruit bats... more fruit is required! | |
